Peanut Butter Truffles
 
My BF loves peanut butter and because of that I have quite a few peanut butter dessert recipes in my to-try pile. Most of them are a little too complicated for my addled brain but this Peanut Butter Truffle recipe, which I have no idea where it is from, looked really easy. I think even I can pull this off. 
 
1 cup All Natural Peanut Butter (Creamy or Smooth)
1 cup powdered sugar
1 tsp vanilla
6 oz good quality dark chocolate, I used Lindt 70%
 
In your stand mixer bowl combine peanut butter, powdered sugar and vanilla. Mix on low speed until sugar is incorporated then turn up to medium until completely combined. It will look kind of crumbly. 
 
Scoop out 1 tbs and for into 1 inch balls and place on a parchment lined baking sheet that will fit in your freezer. When all balls have been formed place baking sheet in freezer for at least 1 hour or overnight.
 
Melt chocolate in a double boiler or in the microwave. The chocolate will haves directions on the package. Once chocolate is melt drop in a peanut butter ball and quickly roll around with a fork to coat. Remove coated peanut butter ball and place on wax paper to dry. 
The dipping in chocolate takes a few tries to get your chocolate dipping rhythm but don’t be discourage they all taste the same no matter what they look like. 
 
These turned out cute and were very easy. The only issue I had was the peanut butter I used was unsalted; it did not have enough peanut flavor.  I would definitely make these again but with a more flavorful peanut butter and maybe stick a chuck of chocolate in the center.

Fish Bowl Recipe.
Fish Bowl (or improvise)
1/2 cup Nerds Candy
5 oz Vodka
5 oz Malibu Rum
3 oz Blue Curacao
6 oz Sweet & Sour Mix
16 oz Pineapple juice
16 oz Sprite
3 slices each Lime, Lemon, Orange
4 Swedish fish
Pour nerds candy in bowl and fill with Ice. Add the mix and your Swedish Fish!

Bacon, Egg and Toast Cups
4 slices of bacon4 slices of bread1/2 cup shredded cheese (I prefer cheddar)4 eggsSalt and pepper, to tastePreheat the oven to 400° F. Grease 4 wells of a muffin pan with nonstick cooking spray.In a frying pan, cook bacon about 3-5 minutes, until partially cooked but not completely crispy. Transfer to a paper towel-lined plate. Cut out rounds of bread with a round cookie cutter or drinking glass. Press the bread rounds into the greased muffin wells. Curl a piece of bacon around each piece of bread, positioning it between the bread and the muffin tin to help keep it in position. Sprinkle a small amount of shredded cheese on top of each piece of bread. One at a time, crack an egg, removing about half of the white, and dropping the remaining white and yolk over each piece of bread, being careful not to break the yolks.Bake until eggs are cooked through to your liking (about 10-12 minutes) and bacon is crispy. Run a knife around the edge of each muffin well and pop the egg cups out. Season with salt and pepper to taste, and serve immediately.
